I think that, looking to the profession list, there will be a system in the game that there are no real NPC's, so human players have to manage all the productions. Then you could make a few productions lists:
miner/woodcutter > blacksmith > shopkeeper > customers (also customers with other professions, because a lumberjack needs an axe (made by a blacksmith), etc)
adventurers (warriors/magicians) >*find weapons and other items*> shopkeepers > customers
fisherman/*hunter*1/*farmer*2/*gatherer*3 > chef > customers
*farmer(for wool and leather)*/*hunter* > Tailor > shopkeepers > customers
gatherers, fisherman, farmers, etc >*find ingrediënts*> alchemists (who make potions) > shopkeepers > customers
---------------------------------------------------------------
*1 > a hunter would hunt animals for meat/skins/etc
*2 > a farmer would keep some animals like sheep and cows, and own some land to produce grain and other food
*3 > a gatherer would gather berries/fruit and other stuff for cooks
Please tell me if you have other ideas that could be professions in the game.
